I don't have what you could describe as a favourite vegetarian meal. I'm not mostly vegetarian by choice, but through circumstance. I do a damn good veg*n stirfry though.

On those rare occasions when I eat out vegetarian food tends to rely too much on dairy in some form or another. Me+dairy is just not happening. It's vary rare that I can find a conventional restaurant (and I'm not talking about fast rood places here) that does vegetarian food I can eat. Ethnic restaurants tend to be much better in this regard.

Get some large field mushrooms, take off the stalks, fry the stalks with onion, any veg lying around and pine nuts. I add a splash of mushroom ketchup/Worcestershire Sauce to the mix to liven it up.
Grill the tops of the 'shrooms then flip them over and put the stir fried mix on top.
Now, at this point, I put some cheese on, but I am a cheese fiend and you can't have any so use dairy free 'cheese' or even thin sliced tofu (I love tofu too).
Whop them back under the grill to brown.

Easy peasey and invented on the fly in a kitchen during a medieval feast when the cook discovered she was a veggie main course short and I had to be inventive with what was around.

I do something fairly similar, and oddly enough I have some large 'shrooms in the fridge ATM.
